[Summer Recipe] Pecan & Sundried Tomato Tapenade

This delicious dish by Grace O, creator of FoodTrients, is rich in inflammation-fighting omegas and antioxidant lycopene—the perfect topping or dip for summer get-togethers!

  • ½ cup olive oil
  • ½ cup coarsely chopped pecans
  • ½ cup minced sundried tomatoes
  • 2-3 Tbsp. sliced black olives
  • 2 Tbsp. minced cilantro leaves
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. minced roasted garlic
  • 1 Tbsp. low-sodium soy sauce or tamari sauce

Mix all the ingredients in a glass bowl and serve. Yields 1½ cups.
