Just in time for fall, this Tomato Jam from Andronis Concept Wellness Resort in Santorini can add a boost of flavor to a variety of dishes!

Ingredients

  • 1 kg tomatoes, diced
  • 750 g brown sugar
  • 1/2 cup basil branches
  • 1 lemon, cut in half

Instructions

Combine the diced tomatoes, brown sugar, basil stalks and lemon halves in a saucepan. Bring the mixture to a boil over low heat. Allow it to simmer gently without stirring for 30 minutes to an hour, until the jam thickens. Once the jam is ready, remove the lemon halves and basil stalks. Fill jars with hot tomato jam, seal and store.
