Mexican Resort Adds Vegan Sushi to the Menu

Grand Velas Riviera Nayarit in Mexico wants to help guests stick to at least one New Year’s resolution—the resort has expanded its healthy dining options, including the addition of vegan sushi developed by vegan chef and author Nikki Sharp.

Made with quinoa and cauliflower rice, the vegan sushi includes rice, purple cabbage, red peppers, carrots, avocado and cilantro.

Other additions to the menu include a fit bowl with 20 different vegetable, grain and fruit options to mix and match; four other bowls featuring healthy ingredients; four juice combos (including one designed for flu season); and a new lineup of complements to the resort’s vegan and vegetarian tasting menus at its fine dining restaurants. Guests can also craft their own salad with a wide range of compliments, from amaranth to grated coconut.
